Biolact

As much as the use of selected yeasts in primary fermentations, it is crucial to have the right ML bacteria to carry out the transformation of malic acid in lactic acid. Selected yeast and bacteria are the only safe way to achieve fermentations that will highlight the varietal characteristics and the sensory profile of wines.

Selected malolactic bacteria, in fact, not only transform malic acid into lactic acid, thus decreasing sharp acidity, but at the same time contribute to the formation of a vast range of positive aromatic wine components.

To guarantee such results, Pascal Biotech makes available to winemakers various direct inoculum freezed-dry cultures from selected lactic bacteria belonging to the Enococcus ceni species. Along with them, come specific systems of reactivation, nutrition and control which enable to safely conduct the MLF.

Active charcoals

AEB Group presents a new generation of active carbon, including straight products and mixtures.

The agents based exclusively on active carbon are Decoran, active decolorizing carbon that selectively reduces color from wines, preserving all positive characteristics unaltered, and Deodal, that eliminates undesired and anomalous smells by enhancing sensorial notes of the different cultivars used during vinification.

Complex preparations contain not only active carbon but also other molecules working both specifically and in synergy. Carbosil is an agent with active carbon, silica gel and silica sol, kaolin and bentonite, ideal for decolorizing fining, along with food gelatins.

All these formulations and others present the ideal concentrations to obtain the best result for each different vinification stage and are obtained from raw materials selected through strict quality controls.

Clarifiers

Among complex clarifiers, Bioquickgel rapidly acts on wines with high concentrations of protector colloids and high quantities of suspended solids and Clarouge softens wines with sensorial notes excessively aggressive or possessing high quantities of unstable coloring fractions.

Microcel and Microcel XL adsorb proanthocyanidinic fractions and monomeric catechins to achieve soft wines, correctly developed and with complex aromas.

Enzymes

Pascal Biotech, a company of the AEB Group, produces enzymatic preparations in granulated and liquid form. Liquid enzymes produced by Pascal Biotech are in ready-to-use stable solutions, sterile filtered to enable an optimal storage time without loss of activity, even if its utilization is suggested within six months from purchase date: the product is stored stable with unaltered activity even at room temperature, anyway under 25°C. Longer storage times are possible, with a yearly 5% loss if preparations are stored at a temperature of 4°C, or with higher losses if preparations are stored at room temperature.

All Pascal Biotech-AEB enzymes are obtained from natural microorganisms and were not submitted to any treatment of genetic modification.

Wine Stabilizers

Process treatments in wine-making aim at preserving wine from alterations in the delicate physical-chemical balance.
